These Banana Oatmeal Cookies are hands down the very best banana flavored cookie I have ever had. Not only are they are moist and chewy for days, they're unmistakably banana-y.

Banana can be one of these flavors that can get lost when you bake with it. It can be really subtle flavor. It always bums me out once that happens, because I really like the taste of banana. And so does the hubs.

So when good brewed banana treats come together, we go a little crazy for them.

These cookies make the listing of banana items to go mad for. With no doubt.

And they are so moistthey practically melt in your mouth. Additionally, with both oats and banana inside them, they are basically healthy, correct? And ideal for breakfast!

Creating them is equally as easy as eating them.

You start with mixing all of those lovely components together.

I have to warn you. The smell of the mixture -- using the banana -- is intoxicating. The hubs was in the kitchen making the dough with me (we made a bargain that included him with me) and we had to work hard to not put our faces, or even a straw, straight in to it.

Then you add all of the ingredients (which means you simply use one bowl yay!) And combine it all together!

To bake them, spoon out about a tablespoon of dough and produce a thick disk, rather than a ball. They spread a bit after baking, and therefore don't place them too close together. Bake them for approximately 10-12 minutes to get a nice, moist cookiecutter. So yummy!

1 additional thing I love about this recipe is really where it came from.

My grandma (my father's mother ) passed out in 2008. Once I started draining a lot a couple of years ago, my uncle gave me her cookbook that he'd had didn't use. I have had it on my list to create numerous her desserts ever since.

My dad and I made her gaufrettes (a French cookie -- my grandparents were French) a year or so ago. It was a convention for my grandma to make them every Christmas! She also gave everyone a huge tin of them, which additional reading was really a feat with 6 sons.

I now know just how much of an accomplishment it was! My goodness. She made them using a conventional gaufrette iron that goes over an open flame. My dad and I had them in the stove. They cook very quickly and you have to be precise. Too long and they sort of disintegrated to the iron. As long and they burned into the iron and we all needed to wash it out.

My dad was pouring the batter and removing the biscuits, I was working the ironthe hubs was time things. It took quite a few attempts to get it , but they had been so excellent! I have attempted to create them again on my own and it works. I'd love to share the recipe, however, the dang irons are so hard to find. And expensive. Sooner or later, I would love to just earn a cookie with the exact same gaufrette flavor.

For today though, I'm sharing these cookies. I don't believe I had them when she made them, but they're from her book.

It's such an enjoyable recipe book to check through, also. There are so many handwritten pages, clippings and paper recipes that were taped into the book. I really like the way that they used to write recipes from the paper -- they'd the individual who filed it's title and adorable little stories. It is so fun to read through them! What a different time in the world!

Anyways, I do not know where this recipe came out. The newspaper looks like it was on a flier from their square dance class or something (they have been big to square dancing). It's undoubtedly from West Virginia, where they lived.



In any event, I am so glad to finally talk about a recipe out of her novel with you! I made a few changes to make them thicker and puffier and they're delicious. There'll be more to come from her recipe book, but for now enjoy the banana.

Banana Oatmeal Cookies



Yield: 34-36 COOKIES


INGREDIENTS:

3/4 cup salted butter, softened (I use Challenge Butter)

1 cup brown sugarpacked

1/2 cup sugar

1 egg

1 teaspoon vanilla extract

1 cup mashed bananas



1 1/2 tsp cinnamon

1 tsp baking soda

1/4 teaspoon ground cloves

2 tsp cornstarch

3 cups old fashioned oats

DIRECTIONS:

1. Mix together egg, brown sugar, sugar, egg, vanilla extract and mashed bananas until well blended.

3. Stir in oats.

4. Preheat oven to 350 degrees.

5. Flatten dough just a little bit, into thick disks. They will disperse a little when baked.

6. Bake for 10-12 minutes or until edges just start to golden.
